To make a Virgin Strawberry Daiquiri, shake with ice and strain into a cocktail glass: 1 oz lime juice, ½ oz simple syrup, 1 oz strawberries and 1 oz soda water.

Chill a cocktail glass: fill it with ice and water while you mix, then tip it out.

Add strawberries and simple syrup to a cocktail shaker and press gently with a muddler or the end of a wooden spoon to mash it.

Add lime juice to the shaker.

Fill the shaker with ice.

Shake hard for 10-15 seconds, until the outside is frosty.
