How to make a Ramos Gin Fizz
To make a Ramos Gin Fizz, shake with ice and strain into a highball glass: 1½ oz gin, 1 oz lemon juice, 1 oz simple syrup, 2 oz cream, 1 egg white, 1 dash vanilla extract and ⅔ oz soda water.

Add gin, lemon juice, simple syrup, cream, egg white and vanilla extract to a cocktail shaker.

Shake hard without ice for about 10 seconds to whip the egg.

Add ice to the shaker.

Shake again for 10-15 seconds, until the shaker feels very cold.

Strain into a highball glass filled with fresh ice cubes.

Top with soda water.

Give it one gentle stir.
Why shake? Lemon juice needs a hard shake to mix and chill properly; cream blends in smoothly only with a hard shake; the egg white needs a dry shake first to turn silky.
