How to make a Lady Love Fizz
To make a Lady Love Fizz, shake with ice and strain into a cocktail glass: 2 oz gin, ⅓ oz light cream, ¼ oz simple syrup, ¾ oz lemon, 1 egg white and 1½ oz carbonated water.

- Egg white1
- Carbonated water1½ oz

Chill a cocktail glass: fill it with ice and water while you mix, then tip it out.

Add gin, light cream, simple syrup, lemon juice and egg white to a cocktail shaker.

Shake hard without ice for about 10 seconds to whip the egg.

Add ice to the shaker.

Shake again for 10-15 seconds, until the shaker feels very cold.

Strain into the chilled cocktail glass.

Top with carbonated water.

Give it one gentle stir.
Why shake? Lemon juice needs a hard shake to mix and chill properly; light cream blends in smoothly only with a hard shake; the egg white needs a dry shake first to turn silky.
No simple syrup? Muddle 1 tsp sugar with a splash of water in the shaker until it dissolves, then carry on.
