How to make an Ipamena
To make an Ipamena, shake with ice and strain into a wine glass: ½ oz lime, ⅓ oz brown sugar, 1⅓ oz passion fruit juice and ginger ale.

Chill a wine glass: fill it with ice and water while you mix, then tip it out.

Add lime juice, brown sugar and passion fruit juice to a cocktail shaker.

Fill the shaker with ice.

Shake hard for 10-15 seconds, until the outside is frosty.

Strain into the chilled wine glass.

Top with ginger ale.

Give it one gentle stir.
Why shake? Lime juice and passion fruit juice need a hard shake to mix and chill properly.

Can I make Ipamenas in a batch?
Yes. For 6 drinks, mix 3 oz lime, 2 oz brown sugar and 8⅓ oz passion fruit juice in a jug and chill it. Add 5 oz of cold water to stand in for the dilution from shaking. Top each glass with ginger ale as you serve, so it stays fizzy.
