How to make a Microwave Hot Cocoa

To make a Microwave Hot Cocoa, heat gently and pour into a mug: 3¾ oz simple syrup, 1½ oz cocoa powder, 1½ oz water, 16 oz milk and 1 dash vanilla extract. Garnish with salt.

    Warm a mug by filling it with hot water, then empty it.

    Heat simple syrup, cocoa powder, water, milk and vanilla extract gently in a small saucepan (or the microwave), stirring, until smooth and steaming, without letting it boil.

    Pour it into the warmed mug.

Why heat it gently? Milk, cream and chocolate scorch if they boil.

No simple syrup? Stir ¼ cup sugar into the warm drink until it dissolves.
