How to make a Tequila Fizz
To make a Tequila Fizz, shake with ice and strain into a highball glass: 2 oz tequila, ½ oz lemon juice, ¾ oz grenadine, 1 egg white and 3 oz ginger ale.

Add tequila, lemon juice, grenadine and egg white to a cocktail shaker.

Shake hard without ice for about 10 seconds to whip the egg.

Add ice to the shaker.

Shake again for 10-15 seconds, until the shaker feels very cold.

Strain into a highball glass filled with fresh ice cubes.

Top with ginger ale.

Give it one gentle stir.
Why shake? Lemon juice needs a hard shake to mix and chill properly; the egg white needs a dry shake first to turn silky.
