How to make an Imperial Fizz
To make an Imperial Fizz, shake with ice and strain into a highball glass: ½ oz light rum, 1½ oz blended whiskey, ¾ oz lemon, ¼ oz simple syrup and 3 oz carbonated water.

Add light rum, blended whiskey, lemon juice and simple syrup to a cocktail shaker.

Fill the shaker with ice.

Shake hard for 10-15 seconds, until the outside is frosty.

Strain into a highball glass filled with fresh ice cubes.

Top with carbonated water.

Give it one gentle stir.
Why shake? Lemon juice needs a hard shake to mix and chill properly.
No simple syrup? Muddle 1 tsp sugar with a splash of water in the shaker until it dissolves, then carry on.
