How to make a Clover Club
To make a Clover Club, shake with ice and strain into a cocktail glass: 1½ oz gin, ⅓ oz grenadine, ¾ oz lemon and 1 egg white.

Chill a cocktail glass: fill it with ice and water while you mix, then tip it out.

Add gin, grenadine, lemon juice and egg white to a cocktail shaker.

Shake hard without ice for about 10 seconds to whip the egg.

Add ice to the shaker.

Shake again for 10-15 seconds, until the shaker feels very cold.

Strain into the chilled cocktail glass.
Why shake? Lemon juice needs a hard shake to mix and chill properly; the egg white needs a dry shake first to turn silky.
