How to make a Casino Royale
To make a Casino Royale, shake with ice and strain into a sour glass: 2 oz gin, ½ oz lemon juice, ¼ oz Maraschino liqueur, 1 dash Orange bitters and 1 egg yolk.

Chill a sour glass: fill it with ice and water while you mix, then tip it out.

Add gin, lemon juice, maraschino liqueur, orange bitters and egg yolk to a cocktail shaker.

Shake hard without ice for about 10 seconds to whip the egg.

Add ice to the shaker.

Shake again for 10-15 seconds, until the shaker feels very cold.

Strain into the chilled sour glass.
Why shake? Lemon juice needs a hard shake to mix and chill properly; the egg yolk needs a dry shake first to turn silky.
