How to make a Barracuda
To make a Barracuda, shake with ice and strain into a margarita glass: 1½ oz rum, ½ oz Galliano, 2 oz pineapple juice, 1 dash lime juice and prosecco.

Chill a margarita glass: fill it with ice and water while you mix, then tip it out.

Add rum, Galliano, pineapple juice and lime juice to a cocktail shaker.

Fill the shaker with ice.

Shake hard for 10-15 seconds, until the outside is frosty.

Strain into the chilled margarita glass.

Why shake? Pineapple juice and lime juice need a hard shake to mix and chill properly.
