How to make a Masala Chai
To make a Masala Chai, heat gently and pour into a mug: 16 oz water, ⅔ oz tea, 1 chunk dried ginger, cardamom, 3 cloves, 1 piece cinnamon, 1-2 whole black pepper and milk. Garnish with sugar.

Instructions

Warm a mug by filling it with hot water, then empty it.

Heat water, ginger, cardamom, cloves, cinnamon, black pepper and milk gently in a small saucepan (or the microwave), stirring, until smooth and steaming, without letting it boil.

Brew the tea.

Pour it into the warmed mug with the heated mixture.
Why heat it gently? Milk, cream and chocolate scorch if they boil.
