How to make a Pisco Sour
To make a Pisco Sour, shake with ice and strain into a cocktail glass: 2 oz pisco, 1 oz lemon juice, 1 oz simple syrup and 1 egg white.
You'll need

- Lemon juice1 oz
- Simple syrupor 1½ tbsp sugar + a splash of water1 oz
- Egg White1

Instructions

Chill a cocktail glass: fill it with ice and water while you mix, then tip it out.

Add pisco, lemon juice, simple syrup and egg white to a cocktail shaker.

Shake hard without ice for about 10 seconds to whip the egg.

Add ice to the shaker.

Shake again for 10-15 seconds, until the shaker feels very cold.

Strain into the chilled cocktail glass.
Why shake? Lemon juice needs a hard shake to mix and chill properly; the egg white needs a dry shake first to turn silky.
No simple syrup? Muddle 1½ tbsp sugar with a splash of water in the shaker until it dissolves, then carry on.
