How to make a Boston Sour
To make a Boston Sour, shake with ice and strain into a rocks glass: 2 oz bourbon, ¾ oz lemon juice, ¾ oz simple syrup and 1 egg white. Garnish with lemon and maraschino cherry.

Add bourbon, lemon juice, simple syrup and egg white to a cocktail shaker.

Shake hard without ice for about 10 seconds to whip the egg.

Add ice to the shaker.

Shake again for 10-15 seconds, until the shaker feels very cold.

Strain into a rocks glass filled with fresh ice cubes.

Garnish with a lemon wheel and a maraschino cherry.
Why shake? Lemon juice needs a hard shake to mix and chill properly; the egg white needs a dry shake first to turn silky.
