How to make a Bellini

To make a Bellini, stir with ice and strain into a champagne flute: 6 oz champagne and 1 oz Peach schnapps.

You'll need

1 drink

Instructions

  1. 1

Chill a flute: fill it with ice and water while you mix, then tip it out.

  2. 2

Pour peach schnapps into a mixing glass (any sturdy glass works).

  3. 3

    Fill it with ice.

  4. 4

Stir for 20-30 seconds, until the outside is cold to the touch.

  5. 5

    Strain into the chilled flute.

  6. 6

    Top with champagne.

  7. 7

    Give it one gentle stir.

Why stir? Peach schnapps is clear, so a gentle stir over ice chills and dilutes it without clouding the drink.

Bellini questions

What does a Bellini taste like, and is it sweet?

Lightly sweet, not sugary: it's mostly fruity and tart. It's a medium drink at about 11% ABV once mixed.

How much alcohol is in a Bellini?

About 11% ABV after mixing with ice, about as strong as a glass of wine.

How do I make a pitcher of Bellinis?

For 6 drinks, mix 6 oz Peach schnapps in a jug and chill it. Add 8⅓ oz of cold water to stand in for the dilution from stirring. Top each glass with champagne as you serve, so it stays fizzy.

What glass do you serve a Bellini in?

A champagne flute.
